So Little Greenhouse is built the only way that actually answers that worry: nothing leaves your phone unless you decide to send it somewhere yourself. Not stored on our side, not synced to an account, not sitting on a server somewhere waiting to become a dataset. There's nothing to sell, because there's nothing here to collect in the first place.

Period Calendar Period Tracker (100M+ installs, 4.9★ on Google Play) is the only one of the three that runs on ad revenue rather than subscriptions, and its listing confirms it serves ads; it offers encrypted backup, but through a Google account rather than a self-held passphrase, which is why that row is framed around account-dependence rather than encryption itself.
Little Greenhouse is still finishing its way to Google Play. When it's live, access is a single subscription — no tiers, no feature paywalls stacked on top of each other.
